Why are Saffrons so expensive?

Saffrons, also known as ‘Red Gold’, is the world’s most expensive spice. But why? To make saffrons, the stigma of the flower is manually harvested, and there are only three stigmata in each flower. This means that it takes about 75,000 saffron flowers to produce only half a kilo of the spice!
